Our Mac guru – Ken – happens to be traveling in Europe right now. I expect he checks his mail and will reply sometime, but not as quick as normal. As you know, I don't have an iPhone, but I did a bit of googling and can't find anything about sorting notes.
I wonder if you should look into some other note taking app. Evernote seems to get a lot of votes. Although I really liked what I read about just using gmail and labels to write yourself notes and organize them. Gmail doesn't sort, but search is sure good.

I am still trying to clarify your question but the best info I can provide is below. There are several apps that will provide the functionality you need so your best choice may be a change of software if this feature is critical.
To sync notes with outlook follow the steps below
1. Go to your iPhone in iTunes.
2. Open the “Info” tab.
3. Scroll down to Notes and check the box to Sync; don't forget to select Outlook.
4. SYNChronize your iPhone with Outlook.
Once the notes are in Outlook, use Outlook to organize the entries as desired. The Notes iPhone app is not and organization tool.

Post Droid X I had an iTouch. It was a replacement for a Palm PDA. I loved it because I could sync Outlook very easily. But Notes did not sync well. I don't remember the problem. I tried a work around and looked at various note apps and settled on Evernote. It was recommended by several friends. I like it very much. I still use it on the Droid. It is free, so you can give it a try.
