Well, it depends on how the ‘folder’ of contact favorites got there.
If it is a widget where you added specific people’s icons to your home screen, then combined them into a folder – you should be able to drag them around into whatever order you want. No automatic sort.
If it is actually your Contact favorites – first, let me know how you did it! – I can’t figure out a way to do that on mine. But, maybe the settings for your contacts will sort that folder? Go to contacts, tap the 3-dot menu in upper right, choose settings, contacts, Sort by.

My wife got busy with her new Galaxy S6 and used the menu in Contacts to set up favorites on a home page. Then to declutter the page she dragged the favorites into a new folder created by just dragging one favorite on top of another – just like making an app folder. However the order in the new folder is best described as “higgledy piggledy” (not sure how one spells that but I went with Google). The only menu option in the folder is choice of color. She is now busy shuffling them into order one by one. I guess no one has automated that, yet!
